Sea urchins love the taste of cabbage!

・What are Cabbage urchins?
In recent years, “isoyake”, which describes the depletion of seaweed from coastal fishing grounds, has occurred nationwide in Japan. The decrease in seaweed-fed turban shells and abalone has become a problem due to this. The causative organisms for this isoyake, or shore-burning are the Murasaki sea urchin. This purple sea urchin is not edible for no meat due to lack of food from shore burning, but instead of seaweed, we gave Miura’s specialty cabbage and cultivated it for a short period of time to make it delicious. This is the “Cabbage urchin” or “Cabbage sea urchin”.

・How does it taste?
According to Kanagawa prefecture, Cabbage urchins, or Murasaki sea urchins grown by fed only cabbage have strong sweetness and almost no bitterness. And since there is no seaweed-derived rocky shore, people who dislike seafood can also eat it deliciously. In addition, the restaurant that had the tasting party said that they would like to use it immediately, as the unique taste comes out when heated and it is easy to get entangled with pasta.
